Springtime in the Southwest blossoms with beautiful cacti flowers. Some of my favorites are the Yellow Prickly Pear and the Pink Cholla. The Prickly Pear cactus produces an edible fruit in addition to its colorful blooms and is used throughout the Southwest in salads, smoothies and salsa. The Cholla cactus buds are a wonderful source of calcium commonly consumed by nursing mothers. But be careful of those spines. They are sharp and detach easily. Beautiful but protective of their blossoms and fruit.
